Buying for someone who plays is easy to get wrong in one specific way: they almost certainly already own tiles, and they may be attached to the set they have. Nearly everything else is fair game.

If you know nothing except that they play

Buy a mat or a card stand. Neither one conflicts with anything they already own, and both are things people rarely buy for themselves.

If they host

The table goods — coasters, score pads, coins — are the pieces that get used every week and replaced almost never.

If they are just starting

Get the whole table at once. It is the one occasion where a bundle is genuinely the right call rather than an upsell.

One thing not to buy: the NMJL card. It is published annually by the League, every player buys their own, and last year's is worthless.
